Summer Stir Fry

Here’s a great way to use all those veggies that are growing in everybody’s garden. It doesn’t heat up the kitchen, and it’s easy to clean up.

Ingredients:

  • stir fry3 cups cooked dirty rice (rice cooked with chicken bouillon or broth) – set aside
  • Summer squash – chopped
  • Zucchini squash – chopped
  • Sweet onion – chopped
  • Red/green/yellow peppers – chopped
  • 12 ounces diced chicken
  • 2 tablespoons butter
  • Stir fry sauce

Mix all ingredients in large skillet, cook slowly so flavors intermingle until chicken is cooked thoroughly.

Put veggie/chicken mixture on top of rice to serve.
