Baked Margarita Spaghetti Squash

Ingredients:
 
1)      1 large spaghetti squash
2)      Olive oil
3)      Tomato – finely chopped
4)      2 tbsp. finely chopped basil
5)      ¼ cup shredded mozzarella cheese (or more if you like!)
6)      Garlic powder
7)      Pepper


Steps:
 
1)      Preheat oven to 400 degrees
2)      Cut the squash in half and remove the seeds
3)      Drizzle the two halves with olive oil and sprinkle with garlic powder and pepper
4)      Place the squash (open side down) on cookie sheet and bake ~30-40 minutes until the squash is soft (spaghetti-like texture)
5)      Remove from oven – scrape and fluff the stringy squash with a fork
6)      Turn the oven up to broil
7)      Put the tomatoes, basil, and cheese in the squash and broil for 3-4 minutes until cheese is melted
