For those scorching summer days, don't turn on the stove, just prepare this salad and enjoy.
Corn & Black Bean Salad
1 15 oz can of Black Beans, drained, rinsed
1 15 oz can of Whole Kernel Corn, drained, rinsed
1 medium Red Onion – diced
2 tablespoons chopped fresh Cilantro
1 Red Bell Pepper, chopped
1 Jalapeno Pepper, chopped
Dressing
2 tablespoons fresh Lemon Juice
1 tablespoon Vegetable Oil
¼ teaspoon salt
